2 tbsp olive oil
1/2 teaspoon mustard
1 two-inch piece ginger, minced
2 bitter gourds cut into 1/2 inch rounds
1 white radish, cut into 1/2 inch pieces
1 green banana (plantain), with skin, cut into 1 inch rounds
2 potatoes cubed
2 carrots 1/2 inch rounds
1 tsp salt
1 tsp sugar
2 cups water
- heat the oil in a large saucepan over medium heat for 2 mins
- add mustard seeds; when they pop reduce heat, add ginger, fry for a min
- add veggies, salt, sugar and stir fry for 5 mins
- add water, bring dish to boil, lower the heat, cover and cook for 10 mins
